Celtic Honey Mead Cake

Prep: 20m | Cook: 45m | Serves: 8

Ingredients

  • 2 cups All-purpose flour
  • 1/2 cup Irish Butter (softened)
  • 3/4 cup Local Honey
  • 2 Large Eggs
  • 1 tsp Ground Cinnamon
  • 1/2 cup Mead (or Apple Cider)

Instructions

  1. Preheat your oven to 180°C and grease a circular cake tin.
  2. Cream the butter and honey together until smooth and pale.
  3. Beat in the eggs one at a time, then fold in the flour and cinnamon.
  4. Gradually stir in the mead until the batter is consistent.
  5. Bake for 45 minutes or until a skewer comes out clean.
